Black Bean Burger With Avocado Cream and Corn Salsa

This burger is made with black beans and Mexican spices. It’s perfect for a luxurious weekend dinner. The burger patty also works well to make in advance.

Ingredients

For the burger patty
  • 230 g black beans, drained and rinsed
  • 0.5 cup sunflower seeds
  • 0.5 cup oats
  • 1 tbsp tomato paste
  • 1.5 tbsp soy sauce
  • 3 garlic cloves
  • chia eggs (3 tbsp chia seeds + 5 tbsp water)
  • 0.5 yellow onion, roughly chopped
  • 0.5 tbsp paprika
  • 0.5 tbsp sambal oelek
  • 1 tbsp cumin
  • 3 tbsp parsley, fresh
  • salt, to taste
  • pepper, to taste
For The Avocado Cream
  • 2 avocados
  • 0.75 cup plant-based greek yogurt
  • 3 tbsp lime juice
  • 3 tbsp parsley, fresh
  • salt, to taste
For The Corn Salsa
  • 0.5 red onion, finely chopped
  • 0.5 tbsp lime juice
  • 2 jalapeno, finely chopped
  • 70 g sweet corn, drained
Other
  • 4 lecture leaves
  • 4 hamburger buns
  • 2 tbsp neutral oil (for frying)

Instructions

  • Prepare the chia eggs by mixing chia seeds and water. Set aside for later.
  • Cut and scoop out the flesh from the avocados and put in a mixer. Add in the plant based greek yogurt, lime juice, parsley and salt and mix to a smooth cream. Place in a jar and put in the fridge until it’s time to serve.
  • For the corn salsa. Finely chop the red onion and the jalapeño. Add to a bowl and blend with lime juice and corn. Set a side.
  • For the burger patty. Put all ingredients (black beans, sunflower seeds, oats, tomato paste, soy sauce, garlic cloves, chia eggs, yellow onion, paprika powder, chili paste, cumin, parsley, salt and pepper) in a food processor and mix until almost lean. It’s tasty to leave a few chunks of black bean. Using your hands, form the batter into four evenly sized patties.
  • Heat a pan to medium heat and drizzle some oil in it. Add the patties to the pan and fry until they turn quite dark brown (but not burned), around 5 min on each side.
  • Build your burgers, by combining the patties, avocado cream, corn salsa and lettuce to the burger buns. (I build them like this: bun, avocado cream, lettuce, burger, avocado cream, corn salsa, avocado cream, bun). Enjoy!
