Black Cabbage Avocado Date Salad

This salad is so ridiculously delicious, you’ll be licking your plate clean. The natural sweetness form the dates paired with the pleasant bitterness from the black kale is a match made in heaven. This is a salad your gonna wanna make on repeat.

Ingredients

Dressing
  • 0.25 cups olive oil
  • 2 tbsp apple cider vinegar
  • 2 tsp dijon mustard
  • 2 tsp syrup
  • salt and pepper to taste
Salad
  • 200 g black cabbage, roughly chopped (stems removed)
  • 0.25 cups dates, chopped
  • 1 cucumber, chopped
  • 2 avocado, cubed
  • 0.5 red onion, sliced
  • 60 g plant-based vegan feta cheese, crumbled
  • 460 g chickpeas, strained and rinsed

Instructions

  • Start by making the dressing by combining all dressing ingredients (olive oil, apple cider vinegar, dijon, syrup, salt and pepper) in a small bowl and mix until smooth.
  • To assemble the salad, combine all salad ingredients (black cabbage, dates, cucumber, avocado, red onion, plant feta and chickpeas) in a large serving bowl. Pour in the dressing and toss to coat evenly.
