Couscous Feta Lentil Wrap

This wrap goes for a satisfying lunch or dinner. They’re easy to make, and are great for meal prep.

Ingredients

Filling
  • 0.5 cup couscous
  • 230 g lentils, strained and rinsed
  • 1 red onion, finely chopped
  • 30 g fresh basil, roughly chopped
  • 60 g plant-based feta
  • 300 g cucumber, cubed
Dressing
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 0.5 tbsp white wine vinegar
  • salt and pepper to taste
Other
  • 4 large wraps
  • 0.5 batch white been hummus

Instructions

  • Start by making the dressing. Combine all dressing ingredients (olive oil, lemon juice, vinegar, salt and pepper) in a small bowl and mix until well combined. Set a side.
  • In a large bowl, combine the filling ingredients (couscous, lentils, onion, basil, plant feta and cucumber). Pour over the dressing and toss until combined.
  • Assemble the wrap by spreading a layer of white bean hummus on top of a tortilla wrap. Add the filling to the wrap before folding the wrap tight.
  • Heat a skillet with oil to medium heat. Add the wrap and let cook until golden brown, about 7 minutes each side. Remove from heat and serve immediately.
