Creamy Chickpea Avocado Sandwich

This sandwich is creamy, filling and packed with flavour. It’s perfect for breakfast but works just as well for lunch or dinner. It’s also ready in just 5 minutes.

Ingredients

Filling
  • 230 g chickpeas, strained and rinsed
  • 0.5 cups plant-based mayonnaise
  • 20 g fresh parsley, finely chopped
  • 1.5 tsp dijon mustard
  • 1 red onion, finely chopped
  • 2 avocados, mashed
  • 0.5 tsp garlic powder
  • 0.25 tsp cayenne pepper
  • salt and pepper to taste
Other
  • 8 pieces of bread
  • 40 g alfalfa sprouts

Instructions

  • In a medium bowl, add the chickpeas and mash lightly. To the bowl add all remaining filling ingredients (mayonnaise, parsley, dijon, red onion, avocado, garlic powder, cayenne, salt and pepper) and mix until well combined.
  • Assemble the sandwich by layering the filling along with sprouts in between two pieces of bread.
