Creamy Orange Sauce With Chickpeas and Spinach

These chickpeas comes to life when coated in a creamy sauce made with orange zest, fresh-squeezed orange juice and spinach.

Ingredients

Sauce
  • 460 g chickpeas, strained and rinsed
  • 1 tbsp neutral oil
  • 1 tbsp cornstarch
  • 100 ml vegetable broth
  • 1 cup plant-based sour cream
  • 100 g spinach, chopped
  • 1 orange, zest + juice
  • salt and pepper to taste

  • 1 cup rice

Instructions

  • Start by cooking the rice according to package instructions.
  • In a small bowl, mix cornstarch and vegetable broth until smooth.
  • Heat a skillet with oil to medium heat and add in the chickpeas. Let cook for 1 minute. Add orange (zest + juice), plant sour cream and spinach and cook until the spinach wilts, about 5 minutes. Add the broth and starch mixture and leave to simmer until sauce thickens, about 5 more minutes. Season with salt and pepper to taste. Serve with rice.
