Crunchy Asian Soybean Salad

An easy to make and fresh Asian inspired salad with flavour of sesame, chili and lime.

Ingredients

Dressing
  • 3 garlic cloves, finely chopped
  • 1 red chili, finely chopped
  • 2 shallots, finely chopped
  • 1 lime, zest + juice
  • 2 tsp syrup
  • 2 tbsp sesame oil
  • 2 tbsp soy sauce
Salad
  • 250 g soy beans, thawed
  • 150 g cabbage, thinly sliced
  • 250 g pak choi, sliced
  • 5 spring onion, chopped
  • 60 g peanuts, roughly chopped

Instructions

  • Start by preparing the dressing by mixing all dressing ingredients (garlic, chili, shallots, lime, syrup, sesame oil and soy) in a small bowl and mix until well combined. Set a side.
  • In a large mixing bowl, add all salad ingredients (soy beans, spring onions, cabbage, pak choi and peanuts). Drizzle over the dressing and toss to combine.
