Easy Vegan Banana Muffins

These banana muffins are soft, moist and requires almost no effort. Made with chopped chocolate and ripe banana these muffins are a favorite. Recipe makes 12 muffins.

Ingredients

Muffins
  • 240 ml plant-based milk
  • 150 g sugar
  • 110 ml neutral oil
  • 3 tsp apple cider vinegar
  • 3 tsp vanilla powder
  • 290 g flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 bananas, mashed
  • 120 g dark chocolate, roughly chopped

Instructions

  • Preheat the oven to 180 degree celsius. Line a muffin form with twelve muffin tins or make your own using parchment paper squares.
  • In a small bowl, whisk together the plant milk, sugar, oil, apple cider vinegar and vanilla.
  • In a medium bowl, whisk together flour, baking powder, baking soda and salt. Add the wet ingredients and mix until combined. Add the mashed banana and mix before folding in the dark chocolate (save some chocolate to sprinkle on top).
  • Divide the batter into the twelve tins, muffins don't rise loads so do not worry if they look full. Sprinkle with chocolate before baking in the oven for 20 minutes.
  • Remove the muffins from the oven and allow to cool in the pan for 5-10 minutes then remove from the pan and allow to cool completely before serving.
