Lemony White Bean Soup

This soup is made with simple ingredients and ready in just 30 minutes. If you prefer smooth soups, feel free to mix the soup at the end for a creamier result.

Ingredients

  • 460 g white beans, strained and rinsed
  • 2 tbsp olive oil
  • 1 yellow onion, finely chopped
  • 3 garlic cloves, finely chopped
  • 1 carrot, cubed
  • 3 potatoes, cubed
  • 800 ml vegetable broth
  • 2 tbsp fresh thyme
  • 100 g spinach
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • salt and pepper to taste

Instructions

  • Heat a sauce pan with oil to medium heat and add in onion, cook until softened and slightly transparent, about 5 minutes. Add in garlic, carrot and potatoes and cook for another 3-5 minutes.
  • Pour in the vegetable broth and bring to a boil, reduce to simmer for 15 minutes. Add in white beans and spinach and leave to simmer for an additional 5 minutes, or until the potato is cooked through.
  • Remove the soup from heat and add lemon zest, lemon juice to the pan. Season with salt and pepper to taste.
