Mushroom Bolognese Pasta

This quick, rich, and tasty bolognese sauce is an excellent everyday family dinner as it’s ready in 30 minutes and made with simple and affordable ingredients.

Ingredients

Bolognese Sauce
  • 250 g mixed mushrooms, finely chopped
  • 2 tbsp neutral oil
  • 1 yellow onion, finely chopped
  • 1 carrot, finely chopped
  • 2 garlic cloves, minced
  • 2 tbsp tomato paste
  • 1 tbsp soy sauce
  • 1 tsp cinnamon, ground
  • 2 bay leaves
  • 1 cups plant-based sour cream
  • 1 cups reserved pasta water
  • 230 g lentils, strained and rinsed
  • salt and pepper to taste
Other
  • 300 g pasta of choice
  • 60 g plant-based parmesan, grated
  • 20 g parsley, finely chopped

Instructions

  • Start by cooking the pasta according to package instructions.
  • Heat a deep skillet with oil to medium heat. Add onion, carrot and garlic and cook until the onion is tender, about 3 minutes.
  • Add the tomato paste, soy sauce, cinnamon and bay leaves and cook until the tomato paste darkens, about 2 minutes.
  • Add the mushrooms and cook until golden, about 8 minutes. Pour in the plant sour cream along with pasta water and lentils. Season with salt and pepper before leaving to simmer until sauce turns thick and creamy, about 15 minutes.
  • Add the cooked pasta to the bolognese sauce, tossing to combine. Top with parsley and grated plant parmesan.
