Quinoa Kale Salad With Lemon Mustard Dressing

This salad takes quinoa to the next level and is the perfect lunch. Make sure to cook the the quinoa in advance to save time.

Ingredients

For The Salad
  • 1 cup quinoa
  • 100 g kale
  • 20 g almond, shaved
  • 1 red onion, thinly sliced
  • 230 g chickpeas, drained and rinsed
For The Dressing
  • 3 tbsp olive oil
  • 1 tbsp syrup
  • 1 tbsp dijon mustard
  • 2 tbsp lemon juice
  • pepper, to taste
  • salt, to taste

Instructions

  • Start by cooking the quinoa according to package instructions.
  • While the quinoa is cooking, prepare the rest of the salad by cutting off the thick stem of the kale and then roughly chopping the leaves. Thinly slice the red onion and mix with the kale, almonds and chickpeas in a large bowl.
  • Mix together the ingredients for the dressing, olive oil, syrup, dijon mustard, lemon juice, salt and pepper, in a separate bowl.
  • Add the cooked quinoa and dressing to the bowl with kaleand mix everything well. Enjoy!
