Red Onion Mashed Potatoes With Chili Buttered Stacky’s

This potato mash is perfectly rich and creamy, full of great flavor and easy to make. Combined with the fresh green beans and somewhat spicy stacky’s this recipe is a crowd favorite.

Ingredients

For the mashed potatoes
  • 600 g potatoes
  • 1 red onion, finely chopped
  • 0.33 cup plant-based milk
  • 0.66 cup plant-based sour creme
  • 1 tsp nutmeg
  • 2 tbsp parsley, fresh, finely chopped
  • salt, to taste
For Chili Butter
  • 4 tbsp plant-based butter
  • 2 tsp sambal oelek
Other
  • 300 g green beans
  • 230 g stacky’s, cubed (or tempeh if these are not available for you)
  • salt, to taste

Instructions

  • Start by chopping the red onion and parsley. Set a side.
  • Cut the potatoes into cubes (2x2 cm). Feel free to peel your potatoes first or leave the skins on.
  • Place the potato cubes in a large pot and cover with water. Boil the potatoes by placing the pot on the stove and turning the heat to high. Let the water come to a boil before reducing the heat to medium-high and continue cooking for about 10-12 minutes. The potatoes are done when they have little to non resistance left. Carefully drain out all of the water.
  • While the potatoes are boiling, heat a pan to medium heat and add in the green beans. Cook, covered, until beans begin to sweat. Remove the lid and stir occasionally until the beans are tender. Salt to taste, and let stand.
  • Cube your stacky’s and heat another pan to medium heat. Add all ingredients (butter, sambal oelek) for the chili butter to the pan and leave the butter to melt. Once melted, stir to combine the sambal oelek with the butter.
  • Add the stacky’s to the pan and let fry until they turn crispy on the outside, about 6 minutes, stir occasionally. Take the pan of the heat and set aside.
  • Finish up the potatoes by mashing them to your desired consistency. Add the remaining ingredients (red onion, milk, sour cream, nutmeg, salt and parsley), and give it a good stir and combine until smooth. Adjust salt to taste.
  • Serve the mashed potatoes with the green beans and chili buttered stacky’s. Enjoy!
