Stacky’s Quinoa Bowl With Curry Dressing

This tahini curry dressing is perfectly creamy and spicy, binding together this dish to a delicious and easy to make bowl.

This recipe goes well to meal prep.

Ingredients

Dressing
  • 0.75 cups tahini
  • 0.5 cups water
  • 1 tbsp curry powder
  • 2 garlic cloves, minced
  • 1 tbsp syrup
  • salt to taste
Salad
  • 2 cups quinoa
  • 200 g spinach, roughly chopped
  • 1 red pepper, cubed
  • 1 green pepper, cubed
  • 1 cucumber, cubed

Instructions

  • Start by cooking the quinoa according to package instructions.
  • Meanwhile, heat a skillet with oil to medium-high heat. Add the Stacky’s to the pan and let fry until they turn crispy on the outside, about 6 minutes, stir occasionally. Take the pan off the heat and set aside.
  • Make the dressing by combining all dressing ingredients (tahini, water, curry, garlic, syrup and salt) in a small bowl, mix until well combine.
  • To assemble the bowl, divide all ingredients (quinoa, spinach, red pepper, green pepper, cucumber and Stacky’s) equally into bowls. Serve along with curry dressing.
