Sweet And Spicy Fried Rice With Sour Pak Choi

This fried rice checks all boxes. It’s sweet, spice and topped with lime marinade pak choi for sourness. It will be your new go to dinner, and can preferably be made with left over rice.

Ingredients

Pak Choi
  • 250 g pak choi, sliced
  • 1 red chili, finely chopped
  • 1 lime, zest + juice
  • 1 tbsp sesame oil
  • salt to taste
Fried Rice
  • 2 cups rice, cooked
  • 3 tbsp sesame oil
  • 3 spring onion, sliced
  • 3 garlic cloves, sliced
  • 250 g stacky's, crumbled
  • 2 tbsp syrup
  • 4 tbsp soy sauce
  • 1 tbsp ginger powder
  • 0.25 water
  • 2 carrots, thinly sliced
Other
  • 2 tbsp sesame seeds

Instructions

  • In a small bowl, prepare the pak choi by combining all ingredients (pak choi, chili, lime, sesame oil and salt) and mix until the pak choi is fully coated. Set a side.
  • Heat a wok skillet (or deep skillet) with sesame oil to high heat. Add in spring onion and garlic and fry until light golden, about 2 minutes. Add in the stacky’s, soy sauce, syrup and ginger and fry until dark brown, about 5 minutes.
  • Add water to the skillet and leave to reduce, about 30 seconds. Add in carrots and leave to cook until carrots are tender.
  • Lastly add in the rice and stir until well combine and rice is heated, about 7 minutes. Serve the fried rice topped with pak choi and sesame seeds.
