Thyme Roasted Chickpea Open Sandwich

This sandwich is a flavour sensation and easy to make. The sandwich is topped with hummus, thyme roasted chickpeas and tahini.

Ingredients

Chickpeas
  • 460 g chickpeas, strained and rinsed
  • 2 tbsp olive oil
  • 4 tbsp fresh thyme, chopped
  • 1 tbsp onion powder
  • salt to taste
Hummus
  • 230 g chickpeas, strained and rinsed
  • 0.75 cup water
  • 1 tbsp tahini
  • 1 tbsp lemon juice
  • salt to taste
Other
  • 4 slices rye bread
  • 2 tbsp fresh thyme
  • 2 tbsp tahini

Instructions

  • Preheat the oven to 200 degrees celsius and prepare a baking sheet with parchment paper. Spread the chickpeas evenly onto the baking sheet. Drizzle with oil and sprinkle with thyme, onion powder and salt. Roast in the middle of the oven until the chickpeas are crispy, about 20-25 minutes.
  • Meanwhile, prepare the hummus by adding all hummus ingredients (chickpeas, water, tahini, lemon juice and salt) to a blender and blend until smooth.
  • To assemble, spread a layer of hummus onto the bread slice and top with roasted chickpeas, thyme and tahini.
