Vegan Arugula Pesto

This small twist of a classic pesto gives a nutty and deep flavour and comes together in just 5 minutes and is perfect for pastas, salads, sandwiches, pizza, bowls and so on.

Ingredients

Pesto
  • 70 g arugula
  • 60 g roasted pine nuts
  • 2 garlic cloves
  • 40 g plant-based parmesan, grated
  • 150 ml olive oil
  • 1 tbsp lemon juice
  • salt to taste

Instructions

  • In a food processor, pulse the pine nuts and garlic until the pine nuts are ground up. Add the arugula, plant parmesan and lemon juice. With the food processor running, drizzle in the olive oil, and process until combined. Season with salt to taste.
