Vegan Kale Pesto With Pumpkin Seeds

If you find yourself with extra kale after creating a recipe this nutrient rich and earthy kale pesto is for you. It’s versatile and can abbe used as a dip, spread or sauce.

Ingredients

Pesto
  • 60 g kale, chopped
  • 60 g pumpkin seeds
  • 40 g plant-based parmesan
  • 3 garlic cloves
  • 100 ml olive oil
  • 1 tbsp lemon juice
  • salt and pepper to taste

Instructions

  • Add all ingredients (kale, pumpkin seeds, plant-based parmesan, garlic, olive oil, lemon juice, salt and pepper) to a blender and mix until you reach desired consistency.
