Vegan Sun-dried Tomato Pesto Panini

This sun-dried tomato pesto panini is easy to put together and bold with flavour. The sandwich makes an incredibly option for busy weeknights, or why not enjoy it as a spectacular breakfast.

Ingredients

Sandwich
  • 0.5 cup sun-dried tomato pesto
  • 8 slices bread
  • 100 g arugula
  • 2 tomatoes, thinly sliced
  • salt and pepper to taste

Instructions

  • Start by spreading sun-dried tomato pesto to one side of each bread slice.
  • To halve of the bread slices add arugula, tomato slices and season with salt and pepper. Complete the sandwich by adding a bread slice on top, pesto spread side facing down.
  • Place the sandwich in a panini press or grill and press until golden brown, about 3-5 minutes.
